Hot Rhubarb Pudding

This wonderful mixture is easier to make than a pie!
Ingredients
- 2 eggs
- 1 c. sugar
- 1 tsp. vanilla extract
- ¼ c. flour
- 4 c. diced rhubarb
- whipped cream
Instructions
- Preheat oven to 350 degrees
- Beat eggs
- Whisk together eggs, sugar, vanilla, and flour
- Stir in the rhubarb.
- Grease a 1½ quart baking dish and pour in the rhubarb mixture
- Bake for 40 minutes or until the pudding is firm
- Serve warm with whipped cream
