Marinated Asparagus
- ¾ c. olive oil
- ¼ c. balsamic vinegar
- 1 clove of garlic, crushed
- 1 Tbsp. lemon juice
- freshly ground black pepper
- 1 lb. fresh asparagus
- 1 c. cherry or grape tomatoes
- 1 c. crumbled feta cheese
- Combine oil, vinegar, garlic, lemon juice, and pepper to taste in a jar; cover and shake until well blended
- Steam asparagus for 3 to 4 minutes, until crisp-tender. Drain; run under cold water to cool
- Arrange the asparagus on a platter and top with tomatoes and feta
- Sprinkle with oil and vinegar dressing; serve at room temperature
