Asparagus Pie
 
 
Much like a quiche!
Recipe type: Entrée
Ingredients
  • ½ lb. fresh asparagus
  • 2 eggs
  • 4 Tbsp. melted butter
  • 1 c. cottage cheese
  • 1 c. sour cream
  • ¼ c. flour
  • ½ tsp. baking powder
  • ¼ tsp. salt
  • 1 tomato, thinly sliced
  • ¼ c. Parmesan cheese
Instructions
  1. Preheat oven to 350 degrees
  2. Steam asparagus until tender, about 3 minutes; arrange in a spoke design on the bottom of a buttered 9" pie plate.
  3. Beat eggs until frothy. Add butter and cottage cheese; beat until almost smooth.
  4. Mix in the sour cream, flour, baking powder and salt.
  5. Pour on top of the asparagus; arrange the tomato slices on top
  6. Sprinkle with the Parmesan
  7. Bake for 30 minutes, or until set and lightly browned.
  8. Remove from oven and let stand for 10 minutes before serving
