Blueberry Cobbler

Ingredients
  • 3 c. fresh blueberries
  • ½ lemon
  • 1⅛ cups white sugar
  • 4½ tablespoons butter, softened
  • 1½ c. all-purpose flour
  • 1½ tsp. baking powder
  • ¾ c. whole milk
  • 1½ c. white sugar
  • ¾ tsp. salt
  • 1½ Tbsp. cornstarch
  • 1 pinch ground cinnamon
  • ¾ c. boiling water
Instructions
  1. Preheat the oven to 350 degrees F (175 degrees C)
  2. Lightly grease an 11x7 inch baking dish
  3. Spread blueberries to cover the bottom of the baking dish
  4. Squeeze lemon juice over berries
  5. In a medium bowl, stir together butter and 1⅛ cups sugar until smooth
  6. Stir in flour and baking powder alternating with the milk until smooth; batter will be thin
  7. Spoon evenly over the berries
  8. In a small bowl, stir together 1½ cups of sugar, salt, and cornstarch
  9. Sprinkle over the top of the batter
  10. Dust with a pinch of cinnamon, then pour the boiling water over the entire dish
  11. Bake for 45 minutes in preheated oven or until golden brown
