Fried Zucchini Cakes

Ingredients
  • ⅓ c. Bisquick or flour
  • ¼ c. Parmesan cheese
  • ⅛ tsp. each salt and pepper
  • 2 eggs, slightly beaten
  • 2 c. coarsely grated zucchini
  • 2 tbsp. butter, or oil for frying
Instructions
  1. Mix Bisquick (or flour), cheese, salt, and pepper in a bowl
  2. Stir in eggs until mixture becomes moist
  3. Add zucchini
  4. Melt butter in skillet over medium heat
  5. Use approximately 2 tablespoons batter for each pancake
  6. Fry each side for 2 to 3 minutes until brown
Notes
Makes 8 to 10 pancakes
