Fried Zucchini Cakes

- ⅓ c. Bisquick or flour
- ¼ c. Parmesan cheese
- ⅛ tsp. each salt and pepper
- 2 eggs, slightly beaten
- 2 c. coarsely grated zucchini
- 2 tbsp. butter, or oil for frying
- Mix Bisquick (or flour), cheese, salt, and pepper in a bowl
- Stir in eggs until mixture becomes moist
- Add zucchini
- Melt butter in skillet over medium heat
- Use approximately 2 tablespoons batter for each pancake
- Fry each side for 2 to 3 minutes until brown
