Baked Zucchini

Ingredients
  • 2 (6 oz.) cans tomato paste
  • ¼ c. water
  • ¼ c. of cooking oil
  • 1 tsp. basil
  • 1 tsp. oregano
  • 1 tsp. salt
  • 1 tsp. pepper
  • ½ tsp. garlic salt
  • 4 lbs. zucchini, sliced
  • 1 lb. mozzarella, sliced/shredded
Instructions
  1. Mix tomato paste with all ingredients except squash and cheese
  2. Place a layer of squash in large greased casserole then cover with tomato mixture
  3. Top with cheese
  4. Repeat layers using all ingredients
  5. Bake at 350 degrees for 45 minutes to 1 hour
