Blueberry Upside Down Cake

Serves: 4 to 6
- 1 pt. blueberries
- ¾ c. sugar
- ¼ c. shortening (or butter)
- 1 egg
- 1 cup flour
- 1½ tsp. baking powder
- ⅛ tsp. salt
- ½ c. milk
- Pour washed blueberries into buttered 1½ quart casserole
- Sprinkle with ¼ cup sugar
- Cream shortening (or butter), ½ cup sugar and egg together
- Sift together flour, baking powder, and salt
- Add flour mixture to creamed mixture alternating with milk
- Bake at 375 degrees for 45 minutes
- Spoon into dessert cups or bowls while hot and serve with whipped cream, ice cream, or milk
