Blueberry Muffins
 
 
A great way to enjoy fresh blueberries!
Recipe type: Breads and Muffins
Ingredients
  • Batter
  • 1½ c. all-purpose flour
  • ¾ c. white sugar
  • ½ tsp. salt
  • 2 tsp. baking powder
  • ⅓ c. vegetable oil
  • 1 egg
  • ⅓ c. milk
  • 1 c. fresh blueberries
  • Crumble Topping
  • ½ c. white sugar
  • ⅓ c. all-purpose flour
  • ¼ c. butter, cubed
  • 1½ tsp. ground cinnamon
Instructions
  1. Batter
  2. Preheat oven to 400 degrees F (200 degrees C)
  3. Grease muffin cups or line with muffin liners
  4. Combine 1½ cups flour, ¾ cup sugar, salt and baking powder
  5. Place vegetable oil into a 1 cup measuring cup; add the egg and enough milk to fill the cup
  6. Combine egg and milk mixture with flour mixture
  7. Fold in blueberries
  8. Fill muffin cups to the top and sprinkle with crumb topping mixture
  9. Crumb Topping
  10. Mix together ½ cup sugar, ⅓ cup flour, ¼ cup butter, and 1½ teaspoons cinnamon
  11. Mix with fork and sprinkle over muffins before baking
  12. Bake for 20 to 25 minutes or until done
