Peach (or Pear) Chutney Recipe from: Group Recipes
2 qts. Peeled and finely chopped, peaches (or pears) ½ cup seedless raisins ½ cup chopped onions 1 ½ cups brown sugar 1 Tbl fresh ginger, minced 1 Tbl minced garlic (optional) 1 whole hot red pepper (leave that way) 2 ½ cups white vinegar (I prefer malt vinegar, but put in white here as it has a more neutral flavor) pinch of salt Combine all and bring to a boil. Reduce heat and simmer 60 minutes. Stir frequently to keep from sticking. Pour, boiling hot, into hot jars and leave 1/4 inch head space - adjust hot tops (lids). Process 10 minutes in boiling water bath. Makes about 3 pints. | |
