Marinated Asparagus Recipe from: This easy marinated version of steamed asparagus is delicious!
3/4 cup olive oil 1/4 cup balsamic vinegar 1 clove of garlic, crushed 1 Tbsp lemon juice freshly ground black pepper 1 lb fresh asparagus 1 cup cherry or grape tomatoes 1 cup crumbled feta cheese
1. Combine the oil, vinegar, garlic, lemon juice, and pepper to taste in a jar. Cover and shake until well blended. 2. Steam the asparagus for 3 to 4 minutes, until crisp-tender. Drain; run under cold water to cool. 3. Arrange the asparagus on a platter and top with tomatoes and geta. 4. Sprinkle with dressing; serve at room temperature | |
