Asparagus Pie
Recipe from: a Flinchbaugh's Orchard Customer Much like a quiche.
1/2 lb fresh asparagus 2 eggs 4 Tbsp melted butter 1 cup cottage cheese 1 cup sour cream 1/4 cup flour 1/2 tsp baking powder 1/4 tsp salt 1 tomato, thinly sliced 1/4 cup grated Parmesan cheese
1. Preheat oven to 350 degrees. Steam the asparagus until just tender, about 3 minutes. Arrange in a spoke design on the bottom of a buttered 9" pie plate. 2. Beat the eggs until frothy. Add the butter and cottage cheese; beat until almost smooth. Mix in the sour cream, flour, bakin powder, and salt. Pour on top of the asparagus; decoratively arrange the tomato slices on top. Sprinkle with Parmesan. 3. Bake for 30 minutes, or until set and lightly browned. Remove from oven and let stand for 10 minutes before serving. | |
