Hot Rhubarb Pudding

This wonderful mixture is easier to make than a pie!

2 eggs
1 cup sugar
1 tsp vanilla extract
1/4 cup flour
4 cups diced rhubarb
whipped cream

1. Preheat ovet to 350 degrees.  Beat the eggs.  Whist together the eggs, sugar, vanilla, and flour.  Stir in the rhubarb.
2.  Grease a 1 1/2 quart baking dish and pour in the rhubarb mixture.  Bake for 40 minutes or until the pudding is firm.  Serve warm with whipped cream.
