Fried Zucchini Cakes

1/3 c. Bisquick or flour 1/4 c. Parmesan cheese 1/8 tsp. each salt and pepper 2 eggs, slightly beaten 2 c. coarsely grated zucchini 2 tbsp. butter, or oil for frying
Mix Bisquick (or flour), cheese, salt, and pepper in a bowl. Stir in eggs until mixture becomes moist. Add zucchini. Melt butter in skillet over medium heat. Use approximately 2 tablespoons batter for each pancake. Fry each side for 2 to 3 minutes until brown. Makes 8 to 10 pancakes.
