Rhubarb Bread Recipe from: Katie Flinchbaugh (Harwick)
Beat together the following ingredients: 1 1/2 cup brown sugar 2/3 cup oil 2 eggs
Add 1 tsp salt 1 tsp vanilla 2 tsp cinnamon
Stir and then add: 1 cup buttermilk 1 tsp baking soda
Stir and then add: 2 1/2 cup flour
Stir and then add: 1 1/2 to 2 cups chopped rhubarb 3/4 cup nuts
Topping includes: 1/2 cup brown sugar 1/4 cup butter 1/3 cup nuts
Bake at 350 degrees in 2 loaf pans for 1 hour.
