Marinated Asparagus
This easy marinated version of steamed asparagus is delicious!
Recipe type: Side Dish
  • ¾ c. olive oil
  • ¼ c. balsamic vinegar
  • 1 clove of garlic, crushed
  • 1 Tbsp. lemon juice
  • freshly ground black pepper
  • 1 lb. fresh asparagus
  • 1 c. cherry or grape tomatoes
  • 1 c. crumbled feta cheese
  1. Combine oil, vinegar, garlic, lemon juice, and pepper to taste in a jar; cover and shake until well blended
  2. Steam asparagus for 3 to 4 minutes, until crisp-tender. Drain; run under cold water to cool
  3. Arrange the asparagus on a platter and top with tomatoes and feta
  4. Sprinkle with oil and vinegar dressing; serve at room temperature
