Hot Rhubarb Pudding

Hot Rhubarb Pudding
 
This wonderful mixture is easier to make than a pie!
Recipe type: Dessert
Ingredients
  • 2 eggs
  • 1 c. sugar
  • 1 tsp. vanilla extract
  • ¼ c. flour
  • 4 c. diced rhubarb
  • whipped cream
Instructions
  1. Preheat oven to 350 degrees
  2. Beat eggs
  3. Whisk together eggs, sugar, vanilla, and flour
  4. Stir in the rhubarb.
  5. Grease a 1½ quart baking dish and pour in the rhubarb mixture
  6. Bake for 40 minutes or until the pudding is firm
  7. Serve warm with whipped cream
