A Flinchbaugh family favorite side dish. Get your fresh butternut squash, onion, Cheddar cheese, milk, eggs, and butter from Flinchbaugh's Orchard & Farm Market.

Serves: 6-8
  • 3 lbs. butternut squash, peeled and cubed
  • 2 eggs, beaten
  • 1 c. shredded Cheddar cheese
  • 1 medium onion, chopped
  • ¾ c. milk
  • 1 tsp. salt
  • ¼ tsp. pepper
  • ½ c. crushed butter-flavored crackers
  • 2 Tbsp. butter or margarine
  1. Place squash in saucepan, and cover with water; bring to a boil
  2. Reduce heat; cover and simmer for 15-20 minutes or until very tender, drain well and place in a large bowl; mash
  3. In another bowl, combine the eggs, cheese, onion, milk, salt and pepper; add to the mashed squash and mix well.
  4. Transfer to a greased 2 quart baking dish
  5. Sprinkle with cracker crumbs
  6. Dot with butter
  7. Bake, uncovered, at 350 degrees for 40-45 minutes or until a knife comes out clean
