Fruit Pizza
 
A fun new twist on an old favorite.

Ingredients
  • Crust
  • ¾ c. sugar
  • ½ . shortening
  • 1 tsp. vanilla
  • 1 large egg
  • 1 tsp. salt
  • 1 tsp. baking soda
  • 2¾ c. flour
  • ½ c. milk
  • Topping
  • 1 (8 oz.) package cream cheese
  • 1 (8 oz.) container Cool Whip
  • 1 tsp. vanilla
  • ½ cup powdered sugar
  • Assorted fruits to top the pizza (peaches, nectarines, pears, strawberries, grapes, kiwi, mandarin oranges, raspberries, blackberries, pineapple, apples, blueberries--be creative!).
Instructions
  1. Crust
  2. Combine sugar, shortening, and vanilla and blend well
  3. Add egg and beat until smooth
  4. Add remaining dry ingredients alternating with the milk until dough is formed
  5. Chill dough for 1 hour
  6. Spray an 13-14 inch pizza pan with cooking spray
  7. Press dough into pizza pan; use a round glass to help even and flatten out the dough
  8. Bake at 350 for 10-12 minutes or until the edges get light golden in color
  9. Allow crust cool
  10. Topping
  11. In a large bowl, blend all ingredients with a mixer until smooth
  12. Assemble the pizza:
  13. Spread the topping onto the cooled crust, leaving ½-1 inch of the edge of the crust uncovered
  14. Arrange fruit over pizza
Notes
Depending on the fruit you use, you can do this the night before. Some fruits like bananas and apples do not store well.
