Ingredients
  • Cake
  • 2 c. flour
  • 2 c. sugar
  • 1½ tsp. cinnamon
  • ¼ tsp. cloves
  • ¼ tsp. nutmeg
  • ½ tsp. salt
  • 2 tsp. baking soda
  • 2 eggs
  • ½ c. vegetable oil
  • 2 tsp. vanilla
  • 4 c. diced apples
  • 1 c. walnuts
  • Icing
  • 8 oz. cream cheese
  • 3 Tbsp. butter
  • 2 tsp. vanilla
  • ½ tsp. salt
  • 1½ c. 10X confectioner's sugar
Instructions
  1. Cake
  2. In large mixing bowl, combine flour, sugar, cinnamon, cloves, nutmeg, salt and baking soda
  3. Add eggs, vegetable oil, and vanilla; mix until smooth
  4. Fold in apples and walnuts
  5. In two 8" round pans, bake at 350 degrees for 45 minutes (or for a 9X13 pan for 1 hour)
  6. Icing
  7. In medium bowl, combine cream cheese, butter and vanilla and mix until smooth
  8. Add salt and slowly add confectioner's sugar until fully incorporated
  9. Spread on cooled cake
